BLTA Summer Salad

You guys!! It’s been forever but I’m baaaaack!

Our garden is in full bloom with tomatoes, lettuce, peppers and onions! Not to mention our massive producing avocado tree (I’m dying inside waiting for those hundreds babies to ripen).

Here in Southern California summer has not arrived but I’m going to pretend it has and celebrate anyways! Plus.. we eat this salad all year around anyways so as long as we have the goods – I’m going to create my favorite version of a BLT sandwich in a bowl. Because if I’m being honest – this is a dang hardy salad… so I might as well call it what it is.

IMG_4906Whenever we have leftover chicken and/or bacon around, we throw this baby together. You can make it all from scratch, but I like to be efficient and plan it out so I can throw it together on a whim. The dressing is the only part that is best when freshly blended – and you can thank me later when you lick the bowl clean.

IMG_4891To build the BLTA base
Add fresh chopped romaine and other greens of your preference to a bowl. Top with chopped or shredded chicken, chopped bacon, halved cherry tomatoes, sliced green onions, and diced avocado. To send this bowl over the edge – fresh make some croutons by cubing a slice of bread, topping with avocado oil, 1-2 drops of lemon essential oil & salt, then toast in the oven for approximately 5 minutes or until golden. Creamy Basil Dressing Recipe
8 oz Sour Cream
2 tbsp apple cider vinegar
2 tbsp fresh basil (or substitute 1-2 drops Basil essential oil in a pinch)
1 tbsp heavy cream
1 tbsp raw honey
1 tsp Celtic sea salt
1 tsp fresh ground pepper
Blend with an immersion blender and serve immediately with salad
